Found this in Patrick’s files, which he’d saved from e-mail dated 7 Jan 2014. (The file is dated 27 Mar 2014.) The subject line read: RECETA DE CAROL.
Here’s the recipe .
It makes 2 bread loaf sized loaves, so you may want to halve it. Or, it also freezes fine for another meal.
2 large carrots, 1 lg. onion,1 rib celery, 1 red pepper 2 garlic cloves. Finely chopped, saute in a little oil until soft, or in a little water. Put in lg. bowl and add: 1 1/2 cups fine breadcrumbs, 4 beaten eggs, 2Tbsp. EACH of Dijon, ketchup and worcester; 1 tsp. Tabasco, 2 Tbsp. salt, 1 tsp. pepper.
By hand , work in 3 lbs. gr. beef and 1 lb. gr,. pork and 500 grams of a Monterey Jack type cheese , cut into half inch cubes. Pat into 2 oiled bread loaf tins or pat into loaf shapes on oiled aluminium foil Bake at 200C for about an hour.
The best bit is the onion gravy for the boiled potatoes.
2 Tbsp. each of oil and butter. Low heat, soften 6 cups thinly sliced white onions. Do not brown. Stir in 1/4 cup flour and stir for about 2 minutes. Whisk in 1 quart chicken stock and cook 7 or 8 minutes until thickened. Add 1 cup heavy cream and cook 5 minutes. Whizz in blender until smooth. Season.
I used pre pack supermarket meat from Lidl and its not as good. Its worth paying the extra from a butcher, who doesn’t add in all those claggy fillers. !!!! let me know..
